    Description

    A nice brunch dish that's a bit different..

    Ingredients

    • 1 1/2 cups corned beef, diced small
    • 2 tbsp butter
    • 3 small potatoes, diced
    • 6 eggs

    Directions

    1. Preheat oven to 375 degrees and grease muffin tins.
    2. Mix the following together: 3 small diced cooked potatoes, 1 1/2 cups corned beef diced small and salt and pepper to taste.
    3. Fry in pan with 2 tablespoons butter for about 10 minutes.
    4. Add hash mixture to muffin pans, indenting in center to make a well. Add 1 egg to each cup. Put in oven and bake until egg is cooked; about 10 to 15 minutes.
    5. Remove from oven and cool 5 minutes. Carefully remove from muffin pan and serve.
