    Light and crispy batter.


    • 1 lemon, cut in wedges (optional)
    • 1 jar tartar sauce
    • 1 (12 oz) can beer, any kind
    • 3 cups canola oil
    • 3 lbs Haddock or other white fish
    • 3 cups tempura batter


    1. Heat oil in heavy deep pan, to 350 degrees.
    2. Mix batter according to package directions using 2 cups batter with any kind of beer for the liquid (approx 1 cup).
    3. Pat fish dry with paper towel and dredge in dry batter mix (which uses the last cup of batter).
    4. Dip fish in wet batter, and lightly wipe some off so it's not dripping with wet batter.
    5. Carefully, put fish in hot oil one at a time, until you are sure it is not sticking to bottom of pan, just move around a little. Then you can add another one, and do the same until all the fish is cooked. Fish will float and be golden brown when done.
    6. Remove cooked fish and place on a paper towel to absorb extra oil. If desired salt and pepper to taste.
    7. Serve with lemon wedges and tarter sauce.
